Sam I am, time to sneak some kale in there! Inspired by the classic book by Dr. Seus, this green eggs and ham has the veggies already build in and great way to start your day off with balance nutrition from kale and eggs.
1 cup kale leaves, packed, any variety
2 teaspoons extra-virgin olive oil or coconut oil
4 slices nitrate-free deli ham
2 whole wheat pitas or 2 slices gluten-free whole grain bread or baquette, toasted
2 tablespoons kale-onaise or goat cheese
Place the kale in a food processor and finely chop. Place the eggs and kale in a bowl and whisk. Heat a medium skillet over medium-high heat and add the oil. Add the eggs and cook 2 to 3 minutes, stirring often, until soft scrambles form and the eggs are cooked through. Spread the kale-onaise or goat cheese on the bread and top each with a slice of ham. Top with the eggs and serve immediately.
